PENNE PASTA WITH SAFFRON

Ingredients:
1 cup chicken broth
12 oz penne pasta
3-4 tbls butter
2-3 tbls good olive oil
1 medium white onion
1 lb sauteed mushrooms
2/3 cup heavy cream
Several pinches saffron
Shredded Parmesan cheese

Directions:

Slice onion thinly; saute in butter and olive oil until soft. Add already cooked mushrooms (that have been sauted in butter;I use leftover mushrooms this way to keep them from going bad). Stir until well heated. Blend in cream and heat through. Turn off fire.
Heat chicken broth in small pot; set aside. Cook pasta according to package directions al dente. Drain and return to pot. Pour hot chicken broth over pasta and stir well.
Pour onion/mushroom/cream mixture over pasta and stir well. Add saffron and stir over low heat, blending until it turns yellow.
Serve on plates, topped with shredded Parmesan.
